Food is an art just like any other. So naturally, you should use the best tools available to you. A musician wouldn’t use an out of tune instrument. Ingredients are my tools, and the plate my canvas.
I love fresh ingredients! Even more so if they are locally grown. A local farmers market can actually save you money, for a better product.

GF Chili cheese fry-dog tacos

Makes 8 tacos

8 GF corn tortillas 1 skin on white potato 1/2 cup Pico 1 small jar of you favorite GF Marinara sauce 8 oz weight ground beef 2 GF sausage links or hotdog 1 package of GF taco seasoning GF, dairy free shredded chedder cheese Olive oil

Preheat oven to 350 Cut potato into thin French fry strips and bake until golden. In a large sauce pan Add a small amount of oil and toast tort shells on both sides. When shells are done, using the same pan begin cooking the ground beef. While that is cooking cut up the sausage or dogs into very small pieces and place in pan with meat. Add in taco seasoning, mix and add marinara and Pico.

Place taco shells in tacoo holders and place a few fries on the bottom. Place meat and sauce mix ontop of the fries, top with cheddar cheese and place in oven for about 5 minutes or until cheese is melted.

Serve immediately, but be careful for the taco racks will be very hot!

Serves best while watching a Yankee game!

Fresh Guacamole Dip

2 cups Roma tomatoes
1 cup green peppers
1/2 cup red onions
1/4 cup cilantro
1 tbl garlic salt
2 tbl fresh lime juice
1 tbl fresh lemon juice
4 tbl kosher salt
6 ripe avocados

Start with fresh ripe Roma tomatoes. Begin with washing them. Core off the stem. Cut in half and dice. It’s important to make sure your Romas are not over ripe, or they will just mush when dicing.
Green peppers. Wash, core out seeds and stem and rinse off excess seeds. Dice to the same size as Romas.
Red onion. Peel, rinse, remove stem and dice to same size.
Cilantro. Dice very small. It’s ok to include stems. Cilantro is the only herb where the stem has the same flavor as the leaves.
Place all ingredients in a bowl and mix.
When adding the fresh juices, first roll the fruit pressing firmly, gently squeezing it between your hand and the tabletop. Cut in half, and squeeze with the cut part facing up. That way, the juices go into the dish and the seeds stay in the fruit.
Avocados. Ripe avocados are firm with a little give. If it feels like there is air in it, its over ripe. If you can’t squeeze it at all, not ripe enough. Peel, make sure you take out the pit and stem. Mash avocados, its ok to have lumps in it.
Slowly add the mix to the avocados until you find the consistency you like. I use about 3/4 cup. You will have left over pico mix to serve as well.
Place the guacamole in a dish and serve.
I LOVE this dish served with celery!!! Although, tortilla chips work just as well

Spicy Chicken Roll-up

Grill boneless skinless chicken breast.

While still hot, use a fork to pull the meat apart into shreds.

In a mixing bowl, combine….
Pulled chicken
1/2 cup pico de Gallo
3 tbls of your favorite hot sauce.
Mix well.

Next, lettuce cups work the best, but any large leaf lettuce will do, I used romaine as shown.

Lay lettuce flat and mound filling, about 3 tbls.

Roll lettuce, plate and enjoy!

Makes about 4 Roll-ups

 

.Chicken Salad Taco with “not so sour crout”

Makes 4 Tacos

2- 7oz bonless skinless chicken breast
4 Gluten Free soft Taco shells
1 cup mayonnaise
1/2 cup pickles
1/2 tsp garlic salt
2 cups shredded cabbage
1 cup red cabbage
1 cup pickle juice
1/4 cup balsamic vinegar
1/4 cup apple juice
1 Globe tomato
1 cup shredded lettuce (romaine)

First step is to make “Danielle’s not so sour crout”
In a tiny pan place….
White cabbage,
Pickle juice,
Apple juice,
Balsamic vinegar, and place into a 350 degree oven and bake for 10 to 20 minutes.

While the “not so sour crout” is baking, place your chicken on a grill pan and grill until it is cooked through. While still hot, use a fork to pull the chicken into shredded pieces, then place in refrigerator to cool.

Mince pickles and place in mixing bowl. Add the garlic salt and mayo to the bowl. Mix well and add chicken, mix well again.

Slice tomato and place 8 slices on grill, flip to grill both sides

Place tortilla shells on grill.
Grill for about a minute per side.

Remove crout from oven and place on grill pan. Grill the crout for one minute continually flipping.

Assemble the taco….

Fold shell
Dividing evenly
Place “Not so sour crout”
Shredded lettuce
Grilled tomatos 2 slices per
Chicken salad
Top with raw red cabbage.

Almost Lasagna

You will need… GF/DF penne 1 bag GF/DF Ricotta cheese I like toffutie brand. GF/DF mozzarella shredded because its low moisture. GF/DF Sauce Salt and oil for pasta.

Pre heat your oven to 350°

Cook your favorite GF Penne past.

In a medium non stick baking pan, place a small amount of your favorite “Sunday Gravy”, just enough to cover the bottom of the pan. Add a small layer of the cooked penne. Spread a thin layer of ricotta cheese and mozzarella, then more sauce. Repeat until pan is full. Bake a 350 for 30 minutes.
